Vegan Rocky Road Fudge

We wanted to share this recipe because it is so delicious and easy to make. You can buy Dandies vegan marshmallows at Vegan Freak. The Denton Vegan Cooperative has promised us some heart shaped rocky road fudge for Valentines Day! But here is the recipe if you want to make it too.

Rocky Road Recipe

2 cups vegan marshmallows
2 cups vegan chocolate chips
1 cup crunchy peanut  butter

Place parchment paper in an 8x8 pan. Place 2 cups of Dandies (vegan marshmallows) in the bottom. Using a double boiler*, melt 2 cups of vegan chocolate chips. Once completely melted, add 1 cup of crunchy peanut butter. Stir until the peanut butter has melted. Pour the chocolate/peanut butter mixture over the marshmallows  and stir slightly. Place in the fridge for an hour or two. Flip the hardened mixture out onto a cutting board and peel off the parchment paper. Cut into small squares and enjoy.

* note: a microwave can be used carefully to melt chocolate chips.
